Our cooking tips.
Start the fire an hour before you want to eat, using dry, hard wood in small logs (beech, oak, ash, hornbeam).
You can use charcoal if you're only using the BBQ, but you'll need flames for the oven.
However, we advise you to take wood and wait until you have embers, as this is healthier than charcoal.
Never switch the oven to BBQ mode while there are flames.
Oven
For pizzas and tarts flambées, it's essential to have constant flames in your hearth, as these rise in the double wall and give you temperature in the upper part of the oven.
The thermometer should be between 200 and 220°. At this temperature, the stone will be 120° hotter, so 320° to 340° is the ideal temperature for baking pizzas and tarts flambées.
We advise you to use the special aluminum grids for pizza and tarte flambée, or the aluminum plates included in our option(temperature maintenance box), to avoid dirtying the stone and ensure perfect cooking.
For all other foods, it is essential to place a cooking grid over the stone to prevent the dish coming into contact with the stone, which will be too hot when your temperature reaches 180° on the thermometer. We recommend cooking your dishes at the same temperature as in your conventional oven, or 10 to 20 degrees lower.
Remember to rotate your dish regularly every 15 min.
Tip: To bake bread, use a baking rack and place the dough on a baking sheet. Add a small stainless-steel jar and place it on the stone to create steam and crisp bread.
Barbecue
NEVER OPEN THE BBQ WHILE THERE ARE FLAMES IN THE FIREPLACE
WAIT UNTIL THERE'S NOTHING LEFT BUT EMBERS
Once you've got embers, you can use your oven just like a traditional BBQ, except that this BBQ is equipped with a draught, which you can use to fan the fire or reduce it if it's too hot.
In addition to the air setting, you can also choose the tilting position of your oven.
The lower the position of the oven, the less smoke will come out the front, and the more your grills will cook from the top and bottom (as the stones are at temperature, they reverberate the heat).
It's up to you to find the position that suits you best.
Use very little wood: 4 logs are more than enough for 4 people if the wood is dry and hard.
